Tony Allan opened the original fish! in 1999. The impressive glass and steel pavilion, just next to Southwark Cathedral, stands out from the Victorian wrought ironwork of Borough Market. The market itself has become the food produce mecca of London and where possible we try and use local suppliers from within the market, allowing us to see the quality of the goods before purchasing them.
The restaurant originally designed by Julian Wickham has more recently been revamped by Paul Daly, and features deep clashing rich browns and darkwoods along with 'Hermes' orange to achieve a comfortable yet stylish effect. The glass pavilion retains its bright, airy interior which wraps around the open kitchen where diners can watch the chefs at work. In the summer, the one hundred and fifty seater restaurant opens out onto the terrace which sits in the heart of Borough weekend market overlooking Southwark Cathedral.
fish! was the first seafood restaurant in the world to work closely with the Marine Stewardship Council in sourcing its fish. fish! remains true to its original premise on which it was originally founded; fresh, sustainable fish, simply prepared and fairly priced. All of the fish we serve is prepared daily at our own long established fishmonger, Jarvis, this simply underlines our commitment to quality and freshness is an integral part to its ongoing success and popularity.
